I watched all of George Floyd's memorial service yesterday which was moving and beautiful. Later, I caught up on the news and am really in disbelief (and that's putting it lightly!) how he-who-must-not-be-named stoops to new lows and ignites division with every tweet. Normally, I don't like talking about politics, but we're so broken as a society and politics have everything to do with it, so it's time to stop being silent.

Anyhow I've been making these Loaded Oatmeal Cookies on repeat, so I hope you enjoy them as much as I do! (Makes 12-16 cookies, depending on the size of your cookie)


1 Tbsp chia or ground flax seeds mixed with 3 Tbsp water
1/2 cup vegan butter
1/3 cup raw cane or coconut sugar
1 tsp vanilla
1 1/2 cups old-fashioned oats
1/2 cup AP flour or AP gluten-free flour
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
3/4 cup walnut pieces
1/2 cup raisins

 

  • Preheat the oven to 350°F

  • In a small bowl, mix the chia seeds with the water and let it rest for 10 minutes while you pull out the other ingredients

  • Beat the butter and sugar together until fluffy, add the vanilla and the gelled chia seeds (chia "egg")  Add the flour, cinnamon, baking powder and salt, mixing to combine. Stir in the walnuts and raisins.

  • Scoop spoonfuls onto a lined baking sheet with 2 inches of space in between each cookie. Bake for 15 minutes until golden brown.
