
The latest favorite on-the-go snack for my kids are Chocolate Peanut Butter Health Warrior Chia Bars. It gives them a good energy boost and is a satisfying snack for during the school day and before sports practice. We've been going through quite a few of them in the first few weeks if school, so of course I thought I would give it a try to make them myself. We did a taste test, and mine were definitely more chocolatey and peanutty than the commercial ones (which were, for some reason, a bit fruity, almost peachy tasting.) I'm happy to say that my homemade version won this taste test!
3/4 cup pitted dates
1/4 cup peanut butter, or any other nut / seed butter
2 Tbsp cacao powder
2 Tbsp chia seeds
3 Tbsp rolled oats
1/4 cup raw whole almonds
1/2 cup kamut or quinoa puffs
2 Tbsp maple syrup

In a food processor or herb chopper, process all the ingredients together until the almonds and everything else has broken down into a paste.

Transfer to a piece of parchment paper and form a thick rectangular shape out of the paste. Place another piece of parchment on top and roll this out to about 1/4" - 1/3" thick. Using a sharp knife, cut them into bars and refrigerate.

Wrap them up individually with the parchment paper, or place them in an airtight food container with layers of parchment in between each slice.
