
Zucchini noodles (aka zoodles) are really so easy to make, and a fantastic replacement to traditional wheat pasta. They're raw, vegan, gluten-free, dairy-free, paleo, AND really so simple to make. All you need is a zucchini, pesto (or your favorite pasta sauce), and a mandolin, spiralizer, or julienne peeler. The spiralizer is the best for making noodle strands out of more fiim vegetables, like carrto, beetroot, or butternut squash. Daikon (japanese turnip) also makes a great replacement for Asiain noodle dishes such as pad thai. Ali Malfucci from Inspiralized has a wonderful cookbook and tons of awesome recipe ideas to make foods out of spiralized vegetables, including buns, nachos, and more. I am looking forward to trying out her taro root noodle recipe when I find some from Chinatown.
