Making dumplings from scratch, using simple ingredients, is a great and delicious hands-on activity. You can prepare these in advance and have a stash in the freezer for a convenient meal, although usually after making them, you'll want to cook some up right away! ;)
In this online class you'll learn:
• How to make dumpling wrappers from scratch
• The flexibility of preparing fillings based on what you have on hand (including leftovers!) and three simple pleats
• The different ways of cooking them up!
INGREDIENTS:
1 1/2 cups flour (190g)
1/2 tsp baking powder, optional
1/2 tsp salt
1/2 cup (120 ml) just-boiled water
FOR COLORFUL DOUGH, substitute the boiled water with fresh-pressed juices (blue butterfly pea flower tea, carrot juice, beetroot juice), brought to a boil, or add 1 tsp turmeric (yellow), spirulina powder (green)
2 teaspoons vegetable oil (sunflower, safflower, rapeseed/grapeseed)
1 cup (70g) leafy greens (spinach, chard, beet greens, cabbage, kale, or bok chop)
1 cup (130g) other fillings (butternut squash, carrots, mushrooms, or tofu)
1-2 tablespoons aromatics (chives, fresh ginger, garlic, scallion, onions)
1-2 tablespoons soy sauce, or tamari
TOOLS:
Mixing bowl
A small food processor*
Sharp knife
Measuring cup or scale
Measuring spoons
Kettle or pot to boil water
Rolling pin or a bottle
Teaspoon
Tongs or chopsticks
TO FRY: Frying pan with a tight fitting lid
TO STEAM: Steamer basket, optional
TO BOIL: A large pot
*If you don't have a food processor, you can easily (and patiently) finely chop the filling ingredients with a sharp knife.
