bliss balls
Also known as Amazeballs, Energy Bites, Power/Protein Balls, or Raw Vegan Truffles, this is a guilt-free snack or quick sweet treat any time of day. I love bringing these when visiting friends, or for a potluck or party. Feel free to mix 'n match your favorite flavors. It's a perfect protein-packed, sugarfree pick-me-up.
ingredients
1 carrot
1 cup raw walnuts
1/2 cup raw sunflower or pumpkin seeds
2-3 medjool dates, pitted
2 Tbsp chia seeds
1/2 tsp cinnamon
2-3 Tbsp pure maple syrup
1/4 cup shredded coconut, or cacao powder to coat
method
Process the carrot first, then add the nuts, seeds, dates, cinnamon and syrup for 2-3 minutes until the ingredients have broken down, are well-combined and a sticky mixture forms. It should hold together when pinched lightly with your fingertips. Roll into balls about the size of walnuts, then coat each ball in the shredded coconut or cacao powder.
Freeze or refrigerate for at least 20 minutes until ready to eat.
