apple-berry crumble
Apple crumble, or crisp, is a simple dessert which can be made with a little prep-work in advance, and then you assemble and pop it into the oven when you sit down to eat, so that you can have a steaming hot dessert to look forward to.
ingredients
FOR THE CRUMBLE:
¼ cup almond flour
¼ cup rolled oats
¼ cup chopped pecans
1½ tsp baking powder
¼ - ½ tsp sea salt
4 Tbsp solid coconut manna
3 Tbsp coconut sugar
FOR THE FILLING:
1 Tbsp coconut oil, plus more for buttering the baking dish
3 large apples, peeled, cored and diced into small cubes
6 oz (170g) fresh blackberries, strawberries or cranberries (or even leftover cranberry sauce)
1 clementine, juiced
2 Tbsp arrowroot flour or tapioca starch
2 Tbsp maple syrup
Juice of half an orange or lemon
method
Preheat the oven to 375°F (190°C)
Mix all the dry ingredients together in a bowl. Use your fingertips to incorporate the coconut manna evenly into the mixture. Freeze for 15 minutes
Generously grease a small deep baking dish with the coconut manna.
Melt another Tbsp of the manna in a frying pan. Over a high heat, cook the diced apple for 2 minutes until slightly softened. Toss the apples with the cranberries, juice, syrup, and the flour, distributing everything evenly. Cook for a further 3-4 minutes. Transfer to the prepared baking dish.
When ready to bake, spread the crumble topping in an even layer on top of the filling. Bake for 25-35 minutes until the top is golden and crisp.
