immunity-boosting lemon cubes

Did you know there are tons of health benefits in lemon peels? They contain calcium, potassium, and are great for your immune and digestive system. I always have a daily antioxidizing lemon water (with a pinch of cayenne pepper) to start my day, and these cubes are so convenient! I learned how to make them from a dedicated customer the 4th Street Food Co-op.

4-5 organic lemons 

method

Rinse and cut the lemons in half and freeze them for at least 3 hours until solid. When ready to process them, take them out of the freezer and let it rest on the counter for 15 minutes. Cut the halves into quarters and place in your food processor with 3-4 tablespoons of water. Process these halves (skins, pith, seeds and all!) into a slush and divvy it up into an ice cube tray for one cube per day in your water. If you have a cold or flu, drinking warm liquids is the best. Add some freshly grated ginger for an extra boost!


NOTE: You can also store the pulp in a jar in the fridge, and stir two tablespoons into your water.
