
the essential loaf
This is an incredibly easy-to-make, tasty, and nutritious loaf, derived from “The Life-Changing Loaf” by My New Roots. No need for yeast and the chemistry of making traditional bread. Simply mix the ingredients together, let this mixture rest, and then bake it! Perfect for a gluten-free option, or even if you’re just tired of plain old sliced bread (which is essentially just sugar and air).
ingredients
3/4 cup raw sunflower seeds
3/4 cup pumpkin seeds (pepitas)
1/2 cup flax seeds
1/2 cup raw almonds
2 cups rolled oats
3 Tbsp chia seeds
3 Tbsp psyllium husk
1 1/2 tsp sea salt
1/2 tsp freshly ground black pepper, optional
1 Tbsp maple syrup
3 Tbsp coconut oil or butter, melted, plus more for greasing the pan
2 cups water
Variation: 1-2 Tbsp fresh chopped thyme, rosemary, or nutritional yeast
method
Combine all ingredients in a large bowl. Let the mixture sit for 10 minutes until the water is absorbed. Then, pour the mixture into a lightly oiled loaf pan, Make sure to firmly press the the mixture into compact, even layer, smoothing out the top.
Let this sit at room temperature for 3 hours, or overnight in the fridge.
Preheat the oven to 350°F. Place the loaf in the middle rack and bake for 30 minutes. Then turn the bread out of the baking pan onto a baking sheet. Bake for a further 35-40 minutes.
Let the loaf cool COMPLETELY before slicing... be patient!
Slice and freeze for optimal freshness.
