ingredients
MAKES 12 to 14
1 cup (150 g) black sesame seeds
10 (100 g) deglet dates, pitted
1 cup (135 g) raw cashews
1 Tbsp chia seeds
1 or 2 Tbsp maple syrup
method
In a dry skillet on medium heat, toast the sesame seeds until fragrant for 3 to 5 minutes, shaking the pan frequently. Coarsely grind them in a food processor for a couple seconds and transfer to a small bowl.
Place the dates, cashews, chia seeds, and syrup in the food processor and process for 1 minute until the dates and cashews have broken up into coarse pieces. Add the sesame seeds and process for another 1 minute until the mixture clumps together when pinched between your fingertips. Don't overprocess as it may start to release natural oils.
Roll into bite-sized balls, about 1 1/4-inch (3 cm) in diameter. If they are oily, you can coat the balls in finely ground sesame seeds, ground coconut flakes, or cocoa powder. They can be stored in an airtight container at room temperature for 3 to 5 days, in the refrigerator for 10 days, or in the freezer for 1 month.
