parchment paper mushrooms

I love the warm heartiness and comfort of mushrooms, they're the ultimate in health comfort food! Simply sauteed with oilve oil, garlic, sea salt, and red pepper flakes is a favorite quick and easy dish with subtle flavors to bring out the earth deliciousness of the mushrooms themselves.

ingredients

3 cups mixed Japanese mushrooms – Enoki, shiitake, maitake, etc
Sea salt & pepper
1 Tbsp low-sodium tamari (GF soy sauce)
1 Tbsp mirin
1 Tbsp olive oil
1 stem green onion/scallion or a handfful of chives, thinly sliced
1 lemon, cut into wedges

method
  • Preheat oven to 400°F.

  • Place a very large sheet of foil or parchment paper on a baking tray, then put the mushrooms on top. Season with salt & pepper. Add the tamari, mirin, and olive oil, tossing to coat. Close up the foil by folding the sides and ends together. Make sure that the package is well sealed. If using parchment paper, gather the edges up and tie it closed with string. Bake for 10-15 minutes.

  • Carefully open the parcel. Sprinkle with green onion or chives. Serve with lemon.
