the essential loaf

This is an incredibly easy-to-make, tasty, and nutritious loaf, derived from “The Life-Changing Loaf” by My New Roots. No need for yeast and the chemistry of making traditional bread. Simply mix the ingredients together, let this mixture sit, and then bake it! Perfect for a gluten-free option, or even if you’re just tired of plain old sliced bread (which is essentially just sugars and air). Don’t have a silicone loaf pan? Try the “If You Care” brand parchment paper loaf trays, they’re great!

ingredients

3/4 cup raw sunflower seeds

1/2 cup flax seeds

1/2 cup raw almonds

2 cups rolled oats

3 Tbsp chia seeds

3 Tbsp psyllium husk

1 tsp sea salt

1/2 tsp freshly ground black pepper, optional

1 Tbsp maple syrup

3 Tbsp coconut oil or light olive oil, melted

2 cups water


Variation: 1-2 Tbsp fresh chopped thyme, rosemary, or nutritional yeast

method
  • Combine all ingredients in a large bowl. Let the mixture sit for 5-8 minutes until theliquid is all absorbed. Then, pour the mixture into the loaf pan, spreading it out evenlyand making a smooth, even surface on top.

  • Let this sit at room temperature for 2 hours, all day, or overnight (if possible).

  • Preheat the oven to 350°F. Place the loaf in the middle rack and bake for 20 minutes. After 20 minutes, turn the bread loaf upside down, sliding it out of the baking pan and directly on to the rack. bake for a further 35-40 minutes.

  • Let the loaf cool COMPLETELY before slicing... be patient!

  • Slice and freeze for optimal freshness.
